PIEROGI RUSKIE
2 and a half cups of plain flour.
1 large egg.
1 cup of warm water.
Filling:
5 big Polish potatoes, Boiled in their skins.
250g of Polish white cheese.
1 large onion.
Salt and Pepper to taste.
Step One: Dough:
*Sift flour into a large bowl and make a well in the middle.
*Crack the egg into the well and add some of the water slowly.
*Combine together, adding more water or flour if needed.
*Seperate in two and place in bowls covered with tea-towel to rest for 20 mins.
Step Two: Filling:
*Boil and peel potatoes and use a ricer if you have one ( a fork is ok if you dont) to crush the potatoes.
*Chop the onions very fine and sautee with some butter until golden.
*Combine potatoes, onions and the cheese in a large bowl and mix together well.
*Season to taste.
Step Three; Assembly:
*Roll out the dough until thin and use a 2in cookie cutter or a wide glass to cut circles.
*Re-roll any excess dough and repeat process.
*For the filling, using a teaspoon, place the filling in the centre of the circles of dough.
*Fold dough over the filling and crimp using a fork to seal shut.
Step Four: Cooking:
* Bring to the boil a large saucepan of salted water.
*Drop Pierogi into water in batches of 5-6.
*When they float to the surface remove them with a slotted spoon.
Step Five: EAT!!!
This should make 25-30 Pierogi.
